Baking A Bread Loaf Using Baking Powder As Raising Agent

The norm is certainly to bake bread with yeast or a sourdough starter as raising agent. Equally, the norm is to bake cake using baking soda or baking powder as raising agent. This has not always been the case. Before the arrival of baking powder and baking soda, yeast and sourdough starters were commonly used to give rise to cakes. Today we turn the tables on bread when we bake a loaf using baking powder as the raising agent. Quite delicious, I might tell you!


In a large mixing bowl, combine 1 cup (250 ml) White Bread Flour with 2 cups (500 ml) Cake Flour.


Add 3 teaspoons (15 ml) baking powder and 1/2 teaspoon (2,5 ml) salt. Mix the dry ingredients well.


Measure 1/2 cup (125 ml) boiling water and fill the cup up to the 250 ml mark with cold milk, (i.e. add 1/2 cup cold milk to the boiling water).


Pour the milk and water into the dry ingredients and mix with a knife so as to avoid adding pressure to the dough.


I needed to add about 1/4 cup more milk, but rather add a little at a time if needed to avoid getting the dough too wet.


Prepare a small bread pan with non-stick spray.


Put the dough in the pan and even out with the knife, trying to avoid putting pressure on the dough.


Bake in a preheated oven at 200 °C for 30 minutes or until golden brown on top.


Turn out on a wire rack and allow to cool.


Serve hot with butter and condiments.
