Preparing Slow-Cooked Pork Roast & Potato Wedges

I bought a pork pack with a beautiful leg of pork in it. This absolutely begged to be slow-cooked int a lovely roast. Once cooked, this meat is delicious if thinly sliced on sandwiches, or even for putting out on a meat platter. You can serve it hot, or cold and makes for the perfect meat to have ready in the fridge over the party season when scores of hungry children or unexpected guests can be known to flood the house at the little or no warning. I cook this roast in today's blog and show you how to make some deliciously crispy potato wedges while we're at it.


Slow-Cooked Pork Roast
We start off with the pork roast as this will take the longest to cook. I start with a roast that weighs roughly 1,5 kg.


I put the roast in the slow-cooker.


I then coat both sides with Lemon & Rosemary seasoning, as well as freshly ground black pepper.


A fresh sprig of rosemary from the garden in placed on top of the pork.


I squeeze the juice of a fresh lemon over the pork.


Then I add a cup (250 ml) of water, cover and cook on high for about 6-8 hours.


When cooked, the meat will literally fall off the bone! Soft and succulent!


Potato Wedges
It is best to prepare your potato wedges about 45 minutes before the meal so that they come fresh from the oil when serving them. I start by combining 3 cups (750 ml) each of water and cooking oil in a large pot.


Cut approximately 5-7 potatoes in quarters to cut wedges. Add it to the oil and water mixture. Now put the pot on the heat and turn it all the way up. Cook for roughly 45 minutes. As everything is added from a cold state, the oil will not splatter. The water will evaporate and you will be left with oil that can be used again as long as you sift it.


I left my wedges in a little too long! Drain the wedges on some paper towels.


These are great as a snack on their own, or you can serve it with the leg of pork.


Dinner is on the table!
